Hi Misty,
If you only got a week or so: I should say stick to Normandy and Brittany.
See threads in France about: Aisne, Somme, Seine Maritime, Calvados, Manche, Cotentin, Île-et-Vilaine,Côtes d'Armor, Finistère, Morbihan. Especially the Finistère is worth a visit and very MH-friendly.
About canals: We did the Meuse from Belgium up to the source: http://www.wildcamping.co.uk/forums/france/9901-french-canals.htmlhttp://
You can find a lot of aires (and other) at: camping-car: stationnements, aires de services, bons coins, BTS, annuaire étapes ACCL (http://a.ccl.free.fr/annuaire/accueil.htm)
Nearly every village in France has free overnight parking, some have aires with services. As long as you stay discreet wilding is no problem at all.
